Whole30 Has Opened My Eyes

Well guys, I’m on day 12 of the Whole30 and I’m doing GREAT!  I was really worried if I would be able to keep up with everything Whole30 but I joined a facebook group, did research, I’m currently listening to It Starts with Food when I work out, and made sure I had lots of meal ideas pinned.  Interestingly enough all that research and prep didn’t prepare me for how much I was going to LOVE Whole30!  Is it something I will do 100% after the 30 days, no but I plan (as of now) to stay paleo about 80/20% of the time.  I honestly have only missed one thing so far being on this diet and that’s wine…. lol

I feel so much better eating healthy.  The main part of Whole30 is to find out what foods your body reacts poorly too and to detox your body.  I knew grains made me feel gross but I always forget how gross they make me feel until I eliminate them from my diet.  I had no clue that sugar was literally in EVERYTHING!  I looked at my garlic salt the first day of the whole30 and found sugar…. eww!

The downfall of the Whole30 and any lifestyle that eliminates bad ingredients, preservatives and all that other crap is that you have to cook almost solely at home and almost 100% homemade.  It is a lot of work… is it too much work for changing my life? Absolutely not! I used to prep my food all the time each week back when I was healthier and in better shape so I know I can do it.  I’m preparing myself for Sundays again when I spend 3ish hours in the kitchen cooking and then cleaning.  School starts next Tuesday so this weekend is week 1 of prepping ALL my food and having meals already broken into each serving so I can grab and go.  Wish me luck!!

How the Whole30 Has Been so Far…

Well guys it’s day 3 for me into my life change, starting with the whole30.  I was super prepared.  I made grocery lists, went to the stores I needed to, prepared my food, and prepped my fitness planner.

I used post its so that I had the flexibility of changing my meals if I wanted to throughout the week.  I gave myself only three goals for the week because I didn’t want to lose track of the main goals.  I have a weigh in meeting each Saturday so that’s why I have the scale sticker at the bottom of Saturday.  In order to stay on track I tried to make this as fun and colorful as I could.  I need color and fun stuff in my life if I’m going to stay on track with rough goals, such as losing weight and getting healthy.IMG_2815.JPG

I made basically all my meat and meals ahead of time except for shrimp, which I guess isn’t considered a meat.  I found a new best friend in the kitchen while I was cooking, my food processor.  I’ve had it for awhile and never knew what the metal part was, the part that has the shredder and slicer on it…. I decided to youtube a how to use it and used it the whole time I cooked…. It cut my cooking time in half at least!  Here’s pictures of what I made please excuse the photos I’m no photographer.

Here is the Kale, Chicken and Spaghetti Squash Bake.  This was the easiest meal to cook.  img_2801

These are supposed to be Chicken Zucchini Poppers but I didn’t have ground chicken so I used ground turkey.  These are delicious but next time I would use less cilantro.img_2802

So, it seems that I would be all ready right?  I mean I prefer fresh breakfast food and vegetables and since I’m not working or in school I didn’t prep either of those things.  When I head back to my busy schedule I will be prepping EVERYTHING!

My goal was to not snack but I was starving on day one so I ate another banana with almond butter.  I was still hungry the whole day but didn’t let that make me eat more or cheat.  I did research and found I may not be eating enough so I changed accordingly and day 2 was much better.  I thought I was golden.  I wasn’t having the side effects that everyone talks about and then… today/day 3 happened.  I slept in later than I ever do woke up and felt like I was in a daze, just not normal feeling.  I am part of a facebook group for the January whole30 challenge so I asked on there if what I was feeling was normal and they said it was.  I have so much I need to do today and I wanted to go to the gym but I think I’m going to just chill today and focus on drinking water (which is what a lot of people said helps).  I’m hoping tomorrow I feel better and can catch up on everything I need to do.

Prepping My Life for the Best Me

Have you ever thought about what would make you the best you?  I have, I spend a lot of time thinking about how I can improve myself because I am never satisfied with what I have accomplished, sad but true.  Along with getting my body in shape and getting healthy I need to focus on getting my mind healthy as well.  I struggle with anxiety (different types) and other mental health conditions that have always affected my health, mentally and physically.  So I had to take some time, do some soul searching, and think… what makes the best me?

Here’s what I came up with and will be focusing on.  My best physical me will be in shape (this does not mean super skinny, ripped, or anything else society has deemed “in shape”).  For me, in shape means being able to do a 5k without thinking about it, going for a hike with friends without worrying about how hard it will be and if I can do it, and doing any other nonextreme physical activity without having to worry about being too heavy or out of shape.  I just want to be healthy and in shape.  Of course, I may change my focus every now and then and try to get more muscles or lean out but for now I just want to be healthy and in shape, both of which I am NOT right now.

My best mental me will be nicer to myself.  I can be my own worst enemy and that needs to stop.  I need to be my #1 fan, my cheerleader.  I am lucky enough to have wonderful people around me who are great cheerleaders but I need to be one for myself.  I need to change the way I talk to myself.  This is the hardest part for me because having anxiety means that I over think, over criticize, and tell myself that everyone doesn’t like me or I said something stupid.  I’m hoping that with working out and eating right my anxiety is less active.  It has been proven that working out is great for your mental health.

The last and final thing I will focus on goes along with being the best mental me. I need to remind myself I am worth it.  Whatever “it” is for the moment I am worth it.  I work hard, I try to be a great friend, sister, daughter but for some reason I don’t think I’m worth anything special.  I always tell myself I didn’t work hard enough, I wasn’t nice enough, etc… I want to remind myself I am worth it!

Now, if you have made it this far you may be wondering why I am writing all of this stuff down about being the best me when I recently said that I was going to be writing about my fitness journey and whole 30 and that is what I am going to focus on for my blog but can one actually get physically healthy and stay that way if you don’t focus on how to be the best you?  I don’t believe so.  I wanted to give a little idea of what I was focusing on while on this journey to being the best physical me.  I like to read about what other people are struggling with because it helps me understand where their writing comes from.  If that’s not your thing, no worries, I won’t be doing it alot 😉

Today is the day, I am prepping all my Whole 30 food for the next week and cleaning out my fridge of anything that may tempt me.  I am great at staying on task, most the time, if there is nothing tempting me, and I have no energy to run to the store.  lol  I am going to do a post probably tomorrow about what I prepped for the week, how I set up my planner now that it’s not blank, and all about my first weigh in for the Tons of Fun challenge (eek).

What do you need to focus on to be the best you?

Wow! It’s been awhile guys…

Hey all, it’s me, the “blogger” who doesn’t blog.  Can I even call myself a blogger if I haven’t blogged in months? My guess is probably not.  I’m on Christmas break from school so I have time again to focus on writing posts.  I don’t have a ton of fun exciting things planned for this break because I’m a broke college student and because I just want to rest.  Blocking (a type of student teaching) wore me out this last semester.  I had a wonderful CT (cooperating teacher), class, and placement but I wanted to take on so much more than I had to that I got overwhelmed and super sick!  With no insurance I didn’t go see a doctor, until a few days ago (over a month of being sick)…. Turns out I have bronchitis.  Advice to everyone… go to the doctor sooner than a month after being sick!

So anyways… my main reason for trying, once again, to keep up with my blog is that I need to keep myself on track with my health and wellness goals.  I don’t want to be unoriginal but it’s time to get myself healthy again and 2017 is going to be that year.  However, because I NEVER start anything on January 1st I will be starting the process of becoming healthy again on December 31st.  I am going to start with Whole 30 and will try to keep up with posting the recipes I use on here.  I used to be super healthy and in shape and I am frustrated that I let myself completely go.  I am hoping that by blogging about my process of getting healthy and back in shape will keep me accountable.  I would love to have supporters and fellow health seekers follow my blog and communicate with me.

My workouts are going to be different then ever before.  I used to run all the time and I have been trying to focus on running again but with my weight and some on going injuries running is not possible right now.  I am going to focus on getting in shape to hike the AT ( disclaimer I have wanted to do this way before the book Wild came out).  I will be doing a lot of cardio but I am going to incorporate weights into my workouts as well.

To keep me accountable offline I am using the Fitness planner from me & my BIG ideas.  I think they maybe sold out online but I was lucky to find mine at Michaels for 30% off about a week ago!  I am going to try to do a post before I start this journey and show you all my planner and my plans.

I May Be the Worst Blogger Ever!

Sorry I’ve been MIA.  I have had a lot on my mind and was struggling with my anxiety. I am doing a lot better now and feel really bad that I let my blog fall to the wayside.  My mom just left yesterday and we had a wonderful three weeks together.  I am hoping to blog about our activities in a few different posts, as to not overwhelm you all.  I appreciate you all that will continue following and reading my posts despite my lack of posting in the last month or so.  I hope to get myself up and writing more frequent posts and I hope you will all enjoy them.  For now I just wanted to give everyone a heads up of what’s to come and inform why I have been MIA.  Thanks for the patience and understanding.

Adventure in Another City

This last weekend was wonderful!  Saturday, Savannah and I headed down to Charlotte, NC for the Miranda Lambert concert.  Well Savannah went for Miranda Lambert, I went for Kip Moore!  I have been a huge fan of his since I saw him a few years back at the West Virginia Fair before he was big.  He’s great to his fans and sings wonderful music!  Anyways, getting off topic lol

I am a huge city girl! I love the tall buildings, the people walking on the streets and everything about the city atmosphere.  We left midmorning to head down to explore Charlotte some before heading to the PNC Pavilion.  If you haven’t been to the PNC Pavilion for a concert you are missing out, it is great! But more on that later.  Traffic was awful going down into Charlotte but we made it in one piece, thankfully lol  Our first stop was Amelie’s for coffee.  I love Taralynn’s blog and she always raves about Amelie’s in her posts so I had to try it!  Savannah and I were NOT let down!  The coffee was delicious and the atmosphere was even better!  I love that we could sit outside and people watch as we drank our coffee.  We were complimented numerous times in less than 5 minutes in there and everyone was so nice!

After sitting for a few minutes we got up and decided to explore.  It was supposed to be around 98* that day but luckily it didn’t feel that hot so it made for perfect walking weather.  Uptown Charlotte is so clean!!  As I said I love cities but I have not found one as clean as Charlotte, at least Uptown.  There was Taste of Charlotte going on and we walked through there to see what they had but it was so hot and we had dinner plans we didn’t try anything.  I wish I would have had more time to explore but I am going back next month with my mom and sister-in-law so we can explore much more then!!!  By the way, I have no idea who this statue is of but it’s a girl with her dog so I had to take a picture! 😉
After we walked around for a bit we headed over to Cantina 1511.  It’s Savannah’s favorite place down and she talked about it so much we decided to eat dinner there before the concert. Can I just say how happy I am that we ate there??  It was so delicious, filling, and fresh!  We both got the Chicken Tostada Salad.  Savannah got a bunch of stuff on the side so I added it to my salad.  I decided to not get dressing on it, I try not to eat dairy because it makes my stomach hurt plus why not choose to be healthy?  I put salsa on my salad in place of dressing.  Their chips and salsa were to die for.  I can’t wait to go back and eat there again.  Plus, on top of everything being so yummy I walked out of there spending only $10, a huge win for a broke girl like me 🙂  I already told my mom when we visit we HAVE to go back here because I know she will love it.

After eating we decided to drive around a little and then head to the venue for the concert.  Another thing I noticed about Charlotte is that there is greenery and fountains everywhere!  You are in a city but they keep it so green and lush that you don’t feel like you are surrounded by concrete.  We got to the venue super early and thought we would have to wait to park but they let us in AND parking was free.  Everyone started pulling out their tailgating essentials, you know tents, lawn chairs, food, drinks, etc.  Savannah and I looked around and I was like, “dang girl we didn’t come prepared, I have all this stuff” lol  What did we bring with us? Blanket, towels, and drinks haha  Most the people we parked by were super nice and fun so we kinda jumped from group to group.  So many people were playing corn hole!  Until I moved to the East Coast I had never seen corn hole and now it’s everywhere. While we were playing corn hole with this two people Savannah’s “boob” fell out of her shirt. I say “boob” because she had on the sticky boobs that you wear instead of a bra… girl problems!  But it was hilarious and we of course took a picture!

We went into the concert a little early to get a decent seat on the lawn.  I love lawn seats because you can lounge, stand, dance, and they are cheap.  It was so hot by the time we got in I wanted to die but there was a misting area so I handed my phone to Savannah and jumped in!  The opening band was ok but I was waiting for Kip to come on.  He always puts on an awesome show and this time was no exception.  I had never seen Miranda Lambert but she put on a great show too, I would definitely go see her again.  We both had a blast but man the drive home was rough!  I can’t complain too much because Savannah drove the whole way but I stayed awake instead of sleeping like I wanted too 🙂  I can’t wait to go back down to Charlotte, I’m sure I’ve said that numerous times already but our vacation can’t come soon enough!

Another Adventure: Bike Riding on the Huckleberry Trail

I have been super excited to share my bike riding afternoon with you all because I love the pictures I took.  The reason for the delay in posting?  I don’t have a cord to hook my phone up to my computer and it was taking forever to get the pictures onto my computer!  Now that they are on the computer I get to share the post 🙂

Savannah and I have bikes that we had great plans to ride all the time this summer but with all “great plans” it didn’t happen like we wanted but we did go ride them last week and had a blast.  The weather has been so hot that I have not been outside to workout nearly as much as I should be.  It’s not all the weather’s fault though but those reasons are for a whole other post.

So anyways last week after we got off work we decided to hook up the bike rack to my car and go ride the Huckleberry Trail.  This trail is so cool and long!  We only went 3.5 miles in and then turned around but there were still miles to go1  It has information about the coal mining that used to go on during certain parts of the trail which is pretty cool if you like history like I do.

The trail also goes over some railroad tracks; some that are still in use and some that are no longer.  This area of Virginia was a group of railroad towns back in the day.  I’m obsessed with railroads. I love to take pictures, walk on them, sit by them, whatever!  I think this love comes from when I was little and I would spend time with my grandma down in San Diego.  Her house was right on a cliff over looking the beach (hence my love of the beach) and the railroad tracks.  I remember playing on them all the time with my cousins and falling asleep to the sound of the train in bed when I stayed the night.  Railroad tracks are just something that make me feel at home so of course I took pictures and Savannah and I took a break to play on them too 🙂

The trail also has a bunch of really cute bridges; some small, some big.  It also has some hills… My bike is a beach cruiser which means it’s heavy, has no gears, and is a pain in my butt (literally too) to get up hills.  I know if I was in better shape it would be easier but either way I wish I had a couple gears to help me out.  The best part about the hills is when you make it to the top and get to go FLYING down them!  At one point we were flying down a hill (the largest one we had to get up) and I was going so fast I couldn’t help but smiling.  I’m pretty sure I ate a ton of bugs going down that hill and I don’t care.  I also almost lost my hat!  I was going so fast that my hat flew off my head but luckily I had my hair through the back so it caught it.  I’m sure I was quite a sight!  At our turning point we stopped to take some pictures because it was just so pretty out.

I may not always love where I live but I sure do appreciate it’s beauty!  I know when I move next month I will have to find more trails to ride and make Savannah come visit so I don’t have to ride alone!

As a disclaimer: I am probably the WORST bike rider!  I know I scared a few people on the trail because I would look at them to say hi and then start to lose control of the bike and head straight towards them!  I would love to become a better rider and I know that will come with lots of practice, I hope… Savannah and I plan on riding again tomorrow and I’m hoping to go further than we did last time.
I wasn’t going to post many pictures of myself on this post/blog because I am not happy with how I look right now but I decided to because I like to see who is behind the computer screen when I am reading blogs and thought maybe my readers liked the same thing.  I plan on doing a post soon about my weight struggles and how I have overcome it and how I plan to again but I just wanted to share that little personal note about my pictures.
